Skirt Steak Guide

Skirt is a long, relatively thin cut with obvious muscle fibers. Inside and outside skirt differ in shape, tenderness and trimming; ask which you are buying. Its appeal is intense flavor and a high crust-to-center ratio, especially when it will be sliced into tacos, sandwiches or a shared platter.

Buying

Check whether tough membrane has been removed and compare the usable portions after trimming. Folded packages can hide uneven thickness or a particularly narrow end. Skirt may carry a premium price in your market, so compare it with flank instead of automatically treating it as budget beef.

Cooking

Cut into lengths that fit the pan or grill without folding. Pat a marinated steak thoroughly dry, then cook over direct heat with close attention. Thin sections can finish rapidly. Use the thermometer carefully from the side and do not rely on a standard thick-steak timer.

Avoid this: A long reverse-sear phase can be unnecessary for a thin skirt steak. Sweet marinades can also scorch before the meat browns properly. For serving, first divide the cooked skirt into manageable pieces, then rotate and slice across its pronounced grain.

Check the center with a thermometer and use the doneness chart. Choose cast iron, grilling or reverse sear to suit the steak’s thickness.
