Hanger Steak Guide

At a glance

Hanger has a pronounced grain and a strong beef flavor. It is often prepared as two lobes after the tough central membrane is removed. That cleaning step matters: a steak can be cooked accurately and still feel unpleasantly chewy if the membrane remains.

Buying

Ask whether the hanger is fully trimmed. If it is sold as a whole piece, allow for membrane removal and check the usable size of each lobe. Availability is inconsistent; do not assume the cut will always be inexpensive simply because it was once a butcher’s favorite.

Cooking

Dry well and cook over direct heat in a grill or pan, then adjust the heat as needed for the thicker portions. Keep each cleaned lobe intact during cooking when possible. After resting, look for the grain and slice across it into manageable pieces.

Avoid this: A marinade adds flavor but does not remove the center membrane. Long acidic soaking is not a cure for poor trimming. The other common mistake is slicing along the fibers, which leaves long strands to chew. Check grain direction before you cover the steak in sauce.

Check the center with a thermometer and use the doneness chart. Choose cast iron, grilling or reverse sear to suit the steak’s thickness.
