What matters in an instant-read or leave-in thermometer for steak.

Choose the thermometer for the job
An instant-read thermometer helps you check a steak’s center at the end of cooking. A leave-in probe tracks progress during an oven or indirect-grill stage. These tools solve different problems, so a wireless app is not automatically an upgrade over a simple fast probe.
Compare the main options
Start with an instant-read probe if you mainly cook steaks in a skillet. You can check several places quickly and avoid assuming a single fixed probe has found the coldest spot.
Add a leave-in probe when you often reverse sear, roast or cook thick steaks indirectly. Check its cable and probe temperature limits; some sensors are not suitable for direct flames or a hot grate.
Treat a grill lid gauge as a description of temperature near its sensor. It is not a substitute for measuring the steak’s center. An infrared thermometer measures a surface and cannot tell you the center temperature.

Use it well
Insert from the side into the thermal center, avoiding bone and major fat seams. Check several points and clean the probe between uses. For an irregular steak, a fixed leave-in probe should still be checked with an instant-read reading before serving.
Care and ownership
Check performance using the maker’s instructions. An ice-water check can help detect a large error; boiling-water checks depend on elevation and other conditions. A unit may not allow recalibration, so find out what the manufacturer recommends before adjusting anything.
Before buying, read the current specifications and warranty from the manufacturer. Compare total cost, including accessories or replacement components you actually need. A discount is useful only if the tool suits your cooking routine.
